What we stand for

Organic, biodynamic, made to measure. These are not selling points: they are the values that guide us.

An estate this size cannot do everything. It can, however, refuse a great deal. Here is what we refuse, and what we oblige ourselves to do.

Living first

The estate is farmed organically — certified by Ecocert — and biodynamically. In practice: no herbicide, no synthetic fertiliser, but plant-based preparations, light mechanical soil work and cover crops between the rows.

Soil is not a substrate, it is an autonomous, living organism. A vine growing in living soil seeks its resources deeper down and copes better with dry summers — which, on the Larzac, is no longer a theoretical question.

Little, and well

Yields are deliberately low. Hand harvest, sorting in the plot, no industrial yeast, gentle extractions. In the cellar, intervention is limited to what protects the wine: very little sulphur, and only when needed.

Each cuvée is made in limited quantity; some vintages run out, and that is the accepted consequence of working this way.

Independent

The estate belongs to the family, with no outside investor. Decisions are taken by the two of them, between the rows or in front of a barrel. That makes some things slow and others very fast.

Writing as method

We prefer a wine with something to say to a wine that displeases no one.

Always

Organic
No herbicide, no synthetic fertiliser. Soil is worked, not corrected.
Sustainable
Cover crops between the rows, mechanical work, a vine that seeks its resources deeper down.
Biodynamics
Plant-based preparations. The estate treats the plot as an organism, not a substrate.
Handmade
Hand harvest, sorting in the plot, gentle extractions. Nothing moves faster than the grape.
Authored
Every cuvée carries an intention and reads back from one vintage to the next.
Rare
Small volumes, small yields, great wines. If some vintages run out, it is the consequence of a choice: « small is beautiful ».
