Stones, a user's guide

At Mas de l'Écriture, ageing is long and patient, exclusively in large vessels — demi-muids of 600 to 1000 litres. The point is to melt the tannins of the wine and those of the wood into an eloquent silkiness, and on no account to brew an infusion of oak.
